Pureed Strawberry Shortcake Recipe

Ingredients:
2 (1-inch) slices pound cake*
2 Tbsp. 2% milk
2 scoops ThickenUp® Clear

1 cups frozen strawberries thawed and drained
2 tsp. sugar
2 Tbsp. + 1 1/2 tsp. (7 1/2 scoops) ThickenUp® Clear

4 tsp. strawberry syrup
1/4 cups whipped topping (optional)

pkg. *Cake should not contain nuts, seeds, dates, coconut, raisins or other particulates that will not puree to a smooth consistency.

Directions:
1. Puree cake by crumbling cake slices into a blender or food processor. Add milk and puree until smooth.
2. Add ThickenUp® Clear and mix briefly to combine ingredients. If needed, scrape down sides of container to make sure all ThickenUp® Clear is blended in.
3. Pour pureed cake slices into a bowl; cover and refrigerate until ready to serve.
4. Place strawberries and sugar into a blender or food processor and puree until smooth.
5. Add ThickenUp® Clear and mix briefly to combine ingredients. If needed, scrape down sides of container to make sure all ThickenUp® Clear is blended in.
6. Pour pureed strawberries into a bowl; cover and refrigerate until ready to serve.
7. To serve: Place approximately ¼ cup pureed cake onto plate or dessert dish. If desired, use a spatula to flatten and shape puree to resemble a square. Top with 1/3 cup pureed strawberries and drizzle with 2 tsp strawberry syrup. Garnish with 2 Tbsp whipped topping, if desired.
