Bread slice (1 oz)
1. Crumble bread into food processor; add milk and puree until smooth.
2. Cover and chill quickly (within 4 hours) to 41°F or below before serving.
3. Hold for service at internal temperature of 41°F or below.
4. Portion one #20 scoop per serving. If desired, use a spatula to shape puree into a square to resemble a bread slice.
Portions may also be placed between two pieces of plastic wrap, flattened and frozen to set shape. Thaw bread before serving.
Serving Option: For warm bread, cover and heat to 165°F or above before serving.
